The History of the Project

initially thought of and began this endeavor in the fall of 2005. I continued into the summer of 2006, starting at the begininng (Afghani), but stalling at Bosnia upon realizing that I could not, at that time, afford to continue the project. The kitchen at the apartment I was living in was also less than ideal.

I have never forgotten the goal of cooking a meal from each of the 257 countries in the world, and decided to start the project up again during my summer months (I am a high school English teacher). The main thing that makes this more feasible at this point in my life is that I am more (notice that I need a modifier) comfortable financially. The ingredients are sometimes obscure, and it does cost a bit to dive into the project.

There are a few things that I am doing differently this time, however. When I first started the project almost four years ago, the goal was not to cook a meal from each country, but merely to taste it. This meant that if there was a restaurant specializing in foreign fare of the nation, I would go there rather than cook a meal. This time I am cooking, regardless of available restaurants. Secondly, this time I am attempting to not just cook what sounds like it will taste good, but cooking what is authentic, preparing the national dish if I can learn what it is and if the ingredients aren't ridiculously obscure.

So, I hope that you can enjoy this webspace, and perhaps feel inspired to try this yourself. I'd love if you'd share recipes, experiences, etc., especially if you know something in particular about a certain country.
